Grilled Halloumi, Pepper and Lentil Salad

Instructions

Step 1
Step 1 Preheat a griddle pan over a high heat.
Step 2
Brush the peppers with a little oil, lay on the griddle and cook for 4-5 minutes on each side.
Step 3
Remove from the pan and roughly chop.
Step 4
Step 2 Brush the halloumi with the remaining oil and grill for 1-2 minutes on each side.
Step 5
Meanwhile combine the peppers with the remaining ingredients in a large bowl and toss to combine.
Step 6
Serve the halloumi with the salad.
