Boxed mac & cheese was always a childhood favorite of mine. Health-food stores carry vegan versions, but honestly, they aren’t that good, and they are super pricey. I much prefer the taste and price of making my own mix. Bonus points: you can also use this powder to whip up a cheese sauce to pour over veggies, tortilla chips, or fries!

Instructions

TO MAKE THE POWDER (1 Cup)

Step 1
1. Add the nutritional yeast, flour, sugar, paprika, salt, onion powder, garlic powder, lemon pepper, and turmeric to an airtight container. Stir or shake well to combine, making sure ingredients are evenly distributed. Store in your pantry for up to 1 year.

TO MAKE THE STOVETOP MAC & CHEESE (Serves 2)

Step 2
1. Bring a medium pot of water to a boil and cook the macaroni noodles according to package directions. Drain and rinse the pasta. Turn the heat off and return the pot to the stove.

2. Pour the plant-based milk and ¼ cup mac & cheese powder into the pot and whisk together. Turn the heat back on to medium-high and whisk until the sauce thickens, 2–5 minutes.

3. Add the cooked pasta to the pot along with the cheese sauce and stir to combine.

TO MAKE THE MICROWAVE MAC & CHEESE (Serves 1)

Step 5
1. Add the macaroni and water to a large microwave-safe mug or bowl, and mix together. Microwave on high for 2–5 minutes until the macaroni is fully cooked. Drain off any excess water.

2. Stir in the plant-based milk and 2 tablespoons mac & cheese powder and microwave 30 seconds more.

TO MAKE THE CHEESE SAUCE (USE AS A DIP OR WITH OTHER DISHES)

Step 7
1. Whisk the plant-based milk and ¼ cup mac & cheese powder together in a small pot. Turn the heat to medium-high and continue to whisk until the sauce thickens, 2–5 minutes. Alternatively, you can prepare the sauce in the microwave by whisking the sauce in a medium microwave-safe bowl. Microwave on high at 30-second increments, stopping to stir it until the sauce thickens, 2–3 minutes.
