Preheat oven to 200deg C Chop zucchini and sweet potato into 1cm cubes
Chop green shallots Microwave diced sweet potato for 4min or until soft Crack and whisk eggs and cream, add salt and pepper to taste Spray olive oil in base of stainless steel pan and heat to medium low heat Fry off kale til soft, then add in the zucchini, sweet potato, and semi dried tomato. Drop heat to low Pour cream / egg mixture over the veggies, then sprinkle both cheeses and green shallots on top Place in oven to cook for roughly 10min
