Instructions
Step 1
Preheat the oven to 350 F.
Step 2
In a skillet on medium heat, spray a light coating of cooking spray. Next, add in bacon slices and cook in batches so that each piece is spaced evenly in the skillet. Cook on both sides for a couple of minutes until crispy then set aside on a paper towel to absorb grease. Allow the bacon to cool down slightly, then chop into desired sized pieces.
Step 3
In a large bowl, add in egg yolks and whisk until combined. Sprinkle in salt and black pepper to taste, along with heavy cream and whisk in.
Step 4
Dice yellow onion and grape tomatoes and add into the bowl along with the chopped bacon and spinach.
Step 5
Lightly coat an iron wedge skillet or baking pan of choice with cooking spray.
Step 6
Add in egg mixture, then add in grated cheese.
Step 7
Place in the oven and bake for 25-30 minutes or until baked thoroughly.
Step 8
Once done baking, allow to cool down for about 2-3 minutes before serving.
