Instructions

Step 1
Mix dry ingredients into bowl
Step 2
Add cheddar, bacon, onion and diced seeded jalapeño to dry ingredients
Step 3
Put 1/4 cup butter into cast iron skillet in 400° oven
Step 4
In separate bowl add butter milk and wisk in eggs, then add oil
Step 5
Once butter is melted in skillet spread butter to all sides and pour remaining into wet ingredients and mix well
Step 6
Combine all ingredients mix thoroughly to combine all flour but do not over mix
Step 7
Pour all ingredients into buttered skillet (should sizzle when it hits the melted butter) then decorate top with round slices of jalapeño if desired
Step 8
Bake for 30 min or until dark golden brown
Step 9
You can check doneness with toothpick. Poke into thickest part and once the toothpick comes out dry it's finished.
