Instructions

Step 1
1. Bring 3/4 cup water, sugar, and lime peel strips to a boil in a small saucepan over medium. Reduce heat to medium low and cook, stirring constantly until sugar dissolves, about 5 minutes

2. Remove from heat and cool completely, about 30 minutes. Remove and discard lime peel strips
Step 3
3. Process lime simple syrup, avocado, yogurt, lime juice, zest and vanilla in a blender until smooth
Step 4
4. Pour mixture evenly into seven ice pop molds
Step 5
5. Sprinkle evenly with Graham cracker crumbs, pushing some crumbs down slightly into the lime mixture
Step 6
6. Freeze for 30 minutes
Step 7
7. Insert one craft stick into each pop. Freeze three hours before serving
