Instructions
Step 1
Strain juice from roasting pan into a bowl and let fat rise to top.
Step 2
Skim fat off top or use a fat separator and set into a separate bowl
Step 3
Measure liquid minus fat and add enough chicken/turkey stock to equal 6 cups
Step 4
Take 3/4 Cup of fat and add to large pan over medium heat then add flour.
Step 5
Stir constantly until roux turns into a rich brown color.
Step 6
Add 2 cups of liquid and stir constantly until blended and smooth
Step 7
Add another 2 cups of liquid and stir until it its blended and smooth
Step 8
Depending on how much gravy you want add the rest of the liquid and stir until blended and smooth, if gravy is too thin add a more fat and flour in equal amounts. Just a little at a time until desired thickness is achieved. If desired strain gravy for a smoother consistency.
