Ingredients

1onion
small, chopped

1 cupfrozen corn kernels
or canned

2 cupslow sodium chicken stock
or vegetable

¾ teaspoondried thyme leaves

1 tspold bay
optional

1 teaspoonlow sodium Worcestershire sauce

1 poundbaking potatoes
cut into 1/2-inch pieces

1 cuphalf-and-half
milk or cream

¼ cupparsley
chopped, optional

½ cupshredded reduced-fat sharp cheddar cheese
Instructions
Step 1
Sauté onions until lightly browned.
Step 2
Increase heat to high; add corn, water, Old Bay, thyme, Worcestershire, and potatoes; bring to a boil.
Step 3
Cover, reduce heat, and simmer 10 minutes or until potatoes are tender.
Step 4
Remove from heat, and stir in half-and-half, chopped parsley, and cheese (cheese is optional).
