Rice Paper Daifuku Mochi with Yakult Cream

Easy mochi made with rice paper! It’s not a true mochi but it’s still delicious! The cream is made with Yakult but you can omit the Yakult and make a sweetened cream if you prefer.

Yakult Cream Filling
Instructions
Step 1
In a bowl, whip together the yakult, heavy cream and sugar until soft peaks.

Step 2
Wash your strawberries and chop off the greens.

Wet the rice paper in some warm water.

Step 4
Place the rice paper in a bowl. Allow for it to soften.
Step 5
Add a layer of cream onto the middle of the rice paper after it has softened.
Step 6
Top the cream with a strawberry and some more cream.
Step 7
Take the edges of the rice paper and fold it together to form the mochi.
Step 8
Pinch all the edges together to seal the mochi.
Step 9
Cut the excess rice paper with scissors after forming the mochi.
Step 10
Freeze the mochi for 30 mins before enjoying!
