Step 1
Preheat the oven to 200°C (400°F/gas 6). Grease a 23 × 33cm (9 × 13in) baking dish with cooking spray.
Step 2
Cut the pizza dough into 16 equal pieces, about 3 ounces each. Using your hands, roll each piece of dough into a 18 to 20cm (7 to 8in) long rope. Carefully tie each rope into a knot, tucking the ends underneath.
Step 3
Arrange the knots in the prepared baking dish, nestling them close together in a 4-by-4 grid. Cover with a kitchen towel or plastic wrap and let rest until slightly puffed, about 20 minutes.
Step 4
Uncover the knots and bake until they are light golden brown on top, about 25 minutes. Transfer the knots to a wire rack and let cool for 20 minutes. Reduce the oven temperature to 180°C (350°F).
Step 5
Cut the grid of knots horizontally, creating 1 large top piece and 1 large bottom piece.
Step 6
Return the bottom half of the knot grid to the baking dish. In this order, evenly layer the chicken, pesto, and mozzarella over the bread. Place the top half of the knot grid on top.
Step 7
Stir together the melted butter, parsley, and garlic in a small bowl. Brush the mixture all over the top of the knots.
Step 8
Bake until the tops of the knots are golden brown and the cheese has melted, 10 to 15 minutes. Transfer the baking dish to a wire rack and let cool for 5 minutes. Pull apart the knots into individual sliders and serve warm.
