Step 1
Cut cheese into cubes ( note you can use any hard cheese you prefer ) then add to a food processor and process until you get little cheese crumbs

Add soft sun dried tomatoes I prefer the ones that are in olive oil . Process again until it’s mixed with the cheese

In a bowl mix chickpea flour gluten free flour salt pepper garlic powder red pepper flakes Italian seasoning and baking powder and whisk to combine . Add into the food processor and add water and olive oil then mix until a dough forms

Step 4
Roll out the dough thinly between two pieces of parchment paper then trim the outside pieces and cut into squares . You can roll out the cut offs later . Insert a chopstick in the centre of each one to make a hole then bake at 170 c 350 f for 15 minutes . Take the tray out of the oven then carefully separate the crackers and give them some space . Put back in the oven at 180 c 360 f for another 10 minutes or until golden and crispy . Enjoy
