Instructions
Step 1
Cook pearl couscous according to packet instructions. When cooked remove from the heat, rinse with cool water and separate grains using a fork.
Step 2
Place cooled couscous in a bowl, and add lettuce, tomato, cucumber and capsicum. Top with chicken and toss to combine.
Step 3
In a small bowl or jar, combine balsamic vinegar and olive oil. Drizzle over the salad and serve.
Step 4
TIP: To save on time cook a batch of pearl couscous at the start of the week and keep refrigerated for use at lunch throughout the week.
