Steamed Dumplings & Potstickers

Instructions

Basic Dumpling Dough

Step 1
Mix salt and flours in a large bowl, make a well in the center.
Step 2
Add water to wall, begin stirring with a wooden spoon until a shaggy mass forms.
Step 3
Add a few drops of water if dough is dry, pinch of flour if dough is wet.
Step 4
Start kneading until soft dough is formed, continue kneading until smooth/elastic.
Step 5
Wrap in floured plastic, let rest at room temp while preparing sauce and filling.

Dumpling Filling

Step 6
Using a spoon combine all ingredients well.

Soy Dipping Sauce

Step 7
Combine all ingredients together. Adjust saltiness with water.

Dumpling Assembly & Cooking

Remove dough from plastic - DO NOT RE-KNEAD!
Step 9
Cut dough into four pieces, then roll into a log, no bench flour.
Step 10
Cut each log in half, then each half into three, for 24 pieces.

Then roll each piece like meatballs between cupped hands.
Step 12
Then dust each ball with bench flour mix, and flatten each ball with your hand.
Step 13
Roll out into a circle, 1/8-inch thickness, roll all dough before starting to fill.
Step 14
Starting with the first round you rolled, place a small amount of filling in center.
Step 15
Using your finger wet edges seal in press, repeat until you run out of dough or filling.
Step 16
Place dumplings in paper lined bamboo steamer, seam side up.
Step 17
Once steamer is full, turn on high until it starts to steam, then lower to medium-low.
Step 18
Cook for approximately 10-15 minutes until done.
Step 19
For pot-stickers, remove dumplings from steamer after 10 minutes, let drip.
Step 20
Place in a lightly oiled non-stick pan, flattest side down, low heat. Cook to crisp one side until golden brown, turn as desired. ENJOY!
