Instructions

Step 1
Preheat oven to 190 degress (Gas 4)

Step 2
Take a 6 compartment silicon muffin tray and cover the bottom of each compartment with berries.
Step 3
In a jug, mash the bananas with a fork. Bananas must be very ripe or over ripe.
Step 4
Beat the eggs and then add to the banana. Mix in the flour and protein powder.
Step 5
Pour the mixture into the muffin tray, leaving a little space at the top.
Step 6
Bake for approximately 20 minutes or until mixture appears set.
Step 7
Allow to cool for a couple of minutes and then carefully remove from the tray.
Step 8
Refrigerate: Store in an airtight container and refrigerate for up to 3 days.
Step 9
Freeze: Allow to cool completely, freeze on a baking tray until hard then transfer to an airtight container/freezer bag. Freeze for up to 2 months.
