1 ¾ cupall-purpose flour
½ cupsugar
½ tspbaking powder
⅛ tspsalt
1 ½ tsplemon zest
1egg yolk
1 ½ tspvanilla extract
½ cupbutter

Instructions
Step 1
Preheat oven to 375 degrees Fahrenheit. Line an 8x8 baking dish with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
Step 3
In a small bowl, whisk together the egg yolk and vanilla extract and stir into dry ingredients. Cut in butter until mixture resembles coarse crumbs.
Step 4
Press about 2/3 of mixture into the bottom of prepared baking dish.
Step 5
In a separate bowl, whisk together sugar and cornstarch and stir in lemon juice. Add in strawberries and blueberries. Stir gently until the berries are coated. Spread berry filling over the top of crust.
Step 6
Top with remaining crumb mixture. Sprinkle with coarse sugar. Bake for 40-45 minutes, or until top is golden brown and bubbly.
Step 7
Allow to cool before cutting into bars. Serve warm with your favorite vanilla ice cream or cold for a sweet breakfast bar!
