Put some garlic and potato slices inside the fish. Put also some sage, rosemary and thyme in it.

Take some aluminum foil, ease down the fish and add some more potato slices, garlic and herbs.

Step 6
Wrap the fish in the foil and close it tight. Put the gilthead bream into the oven. You can ease it down into a baking dish or a casserole dish. Cook the fish for about 20 minutes or a little more depending how big it is. If you can measure the internal temperature, the fish is cooked at 65°C.
