Instructions

Step 1
In a large pan add the balsamic vinegar then the zest and juice of a lemon and 1 heaped tablespoon of honey or maple syrup if you want to keep it vegan. Stir all the Ingredients together then bring it to a boil over a high heat . This gets quite strong smelling so you might want to open a window .
Step 2
Reduce the heat to medium and stir occasionally and let it continue to cook until it’s reduced by half or 60 % less . Take the pot off the heat and strain out the liquid over a jug to get out the lemon zest . Pour into a clean glass container and as it cools down it will thicken up . This can be kept in a cool dark place unopened or once opened transfer to the fridge and use within 3-4 weeks . I like to transfer mine to squeezy bottles to drizzle over my salads .
