Instructions

Step 1
Remove yellow rind and cut into small pieces
Step 2
Wash 2-3 times to remove the bitterness. Squeeze excess water out too.
Step 3
Put into a pot of water and bring to a boil. After it boils squeeze excess water out.
Step 4
Put sugar and water into a pan.
Step 5
After boiling add rind pieces and keep stirring until the water has been absorbed and there is no water left (about 10 minutes).
Step 6
Off the heat, let it cool for 2-3 minutes, and then keep stirring for another 5 minutes until frosted.
