Instructions
Step 1
Preheat oven to 325F.

Step 2
Combine cream, milk, garlic butter, garlic, 3 tsp thyme, nutmeg, salt, and pepper in medium saucepan and bring to a simmer over medium heat, stirring occasionally to prevent scorching.

Step 3
Reduce heat to low/medium-low to maintain simmer for 25-30 minutes, until sauce is thickened, stirring often to prevent scorching.
Step 4
In a 9x13 baking dish, layer in sauce, then potatoes, repeating until finishing with the last of the sauce on the top layer. Season with some more salt, pepper, and nutmeg.

Step 5
Cover baking dish with aluminum foil and place into oven for about 45 minutes.

Step 6
Pull from oven and remove foil. Set oven to 350F. Top with gruyere and remaining 1 tsp thyme.
Step 7
Place back into oven, uncovered, for 30-40 minutes, until cheese is caramelized and bubbly.
