Instructions
Step 1
Season beef with salt & pepper, coat evenly with corn starch and tomato paste
Step 2
Roast in 400f 200c oven until nicely browned, sweat Mirepoix, add garlic and herbs
Step 3
Deglaze with red wine, add stock, browned beef, simmer until starch is cooked out and beef is tender
Step 4
Keep filling hot, pour into a bowl and put pastry on top, oven to finish puff pastry, biscuit dough or pie crust
