Thai Peanut Pork Satay Skewers with coconut rice

Instructions

Step 1
In a medium pot, add rice, coconut milk and Va cup water (/ cup water for 4 portions).
Step 2
Stir well to combine.
Step 3
Season with salt and bring to a boil over high heat.
Step 4
Once boiling, reduce heat to medium-low and cover.
Step 5
Cook for 12-15 min, until rice is tender.
Step 6
Wash and dry all produce.
Step 7
Cut stems off green beans.
Step 8
In a medium bowl, add peanut butter and set aside in a warm place.
Step 9
Set aside, still covered, for 5 min.
Step 10
Fluff coconut rice with a fork.
Step 11
In a medium pan, add green beans and 1/4 cup water (double for 4 portions).
Step 12
Season with salt and bring to a boil over high heat.
Step 13
Once boiling, reduce heat to medium and cook for 4-5 min, until beans are almost tender and water has evaporated.

Add 1 tbsp butter (double for 4 portions) and continue cooking for 1-2 min, until fragrant and sizzling .

Meanwhile, in a large non-stick pan, heat 1 tbsp oil over medium heat.

While pan heats, pat pork dry with paper towel and season with Golden Turmeric Spice Blend.
Step 17
Thread pork on to wooden skewers to create 4 satays (8 skewers for 4 portions) .
Step 18
When pan is hot, add pork satay skewers and cook for 8-10 min, turning halfway through, until no longer pink.
Step 19
While pork and beans cook, to the peanut butter, add soy sauce, chili garlic sauce (refer to Chef's Tip for heat guide) and 1 tbsp hot water (double for 4 portions), Whisk well to combine, until smooth.
Step 20
Plate coconut rice with pork satay skewers and green beans.
Step 21
Sprinkle with crispy shallots and serve peanut sauce alongside for dipping
