Instructions

Step 1
1. Only half cook your noodles in boiling water, then wash in cold water to remove the starch.

3. Push the egg, tofu and prawns to one side with you slightly fry your noodles before adding in your sauce

- Add the noodles to a bowl of bowling water for 2 minutes until just start to soften. You only want to half cook the noodles as they will continue to cook in the pan. Remove from hot water and then rinse with cold water to remove the starch.
Step 5
- Mix everything together for the sauce together in a bowl
Step 6
- Cut the tofu into cubes.
Step 7
- Take a large pan on medium high heat with a little oil. Add the tofu and cook for around 5 minutes until golden.
Step 8
- Now add your chicken or prawns.
Step 9
- Once almost cooked, push the prawns and tofu to one side of the pan. Add the egg, and scramble slightly with wooden spoon, then once half cooked push that to the side too
Step 10
- Add the half cooked noodles to the pan and fry for around 3 minutes.
Step 11
- Add the sauce and a couple tbsp of water and mix everything together. Cook for around 5 minutes until the noodles are fully cooked
Step 12
- Remove from heat and add a good handful of crushed peanuts
Step 13
- Serve and garnish with a lime wedge, extra peanut and chilli flakes.
