Spinach Lasagne

Instructions

Meat Sauce

Step 1
Add finely chopped onion & crushed garlic to heavy-based, shallow pan and sauté until transparent.
Step 2
Add minced beef, stir (while breaking up) until meat is browned, drain off any excess fat.
Step 3
Add mushrooms & lightly sauté (approx 3 minutes).
Step 4
Season with salt & pepper, add oregano, sugar and diced tomatoes.
Step 5
Bring to boil, reduce heat, simmer, covered for approx. 45 minutes.
Step 6
Uncover, simmer further until sauce thickens (approx. 15 mins).

Béchamel Sauce

Step 7
Melt butter in saucepan, add flour, salt, pepper & nutmeg, blend until smooth.
Step 8
Stir over heat 1 minute, gradually adding milk, stir until sauce boils & thickens, reduce heat, cook for further minute.
Step 9
Remove from heat, stir in grated cheeses until they melt.

Construction of Lasagne

Step 10
Cover base of shallow ovenproof dish with lasagne sheets (28cm x 18cm lamington tin ideal).
Step 11
Spread half the meat sauce over the lasagna, then cover with half the cheese sauce.
Step 12
Press as much liquid as possible from thawed spinach, spread evenly over the cheese sauce.
Step 13
Top with lasagna sheets & spread with remaining half of meat sauce, then cheese sauce, top with remaining lasagna sheets.
Step 14
Cover top with mozzarella slices, the sprinkle combined grated cheese and parmesan. Bake in a moderate oven for approx. 40 minutes or until top is golden brown.
Step 15
Remove from oven, let stand for 10 minutes before serving.
