Instructions

Step 1
Heat the oil in a large frying pan.
Step 2
Once hot, add the diced chicken and cook until starting to brown.
Step 3
Add the diced pepper and diced onion to the pan, give a good mix and cook until the veg is soft and the chicken is cooked.
Step 4
Stir in the Thai curry paste and gently fry for 2 minutes.
Step 5
Pour in the tin of coconut milk, bring to a boil and then reduce to a simmer until the sauce has reduced and becomes thicker. ensure to stir often.
Step 6
Once the sauce is thick, serve on top of basmati rice.
