pesto! it’s the foundation for so many dishes. don’t pass it up especially in the summer when fresh ingredients are everywhere. approximate measurements here. i’m a handful of this and that girl. adjust where needed. no chopping either. throw it all in the blender!

rinse off the herbs, pat dry and throw it all in the blender. cheese, whole garlic cloves, salt and pepper. if pesto is thick and won’t purée add a little more olive oil in and water. a tablespoon at a time. you probably won’t need more than 1, plus you don’t want watery pesto. purée until smooth. that’s it.
