For 6 half muffins/eggs, use 4 yolks and 1 stick + 2 Tbsp butter

Instructions
Step 1
Heat butter in a separate pot.Whisk egg yolks in a double boiler
Step 2
Whisk egg yolks in a double boiler over very low barely simmering or just steaming water.
Step 3
While whisking continuously, start adding small amounts of butter drizzled in until all has been incorporated.
Step 4
Is sauce starts to thicken too much or break, add small amounts of water that is hot from microwave.
Step 5
Once butter is incorporated, squeeze a half a lemon into taste, and put a couple dashes of Tabasco.
Step 6
Serve immediately.
