Here are a few tips for a perfect poached egg, firstly always use the freshest eggs possible and cook them from room temperature.

Instructions
Step 1
Crack the eggs through a small sieve, this will pass off the liquid egg white, gently pop into separate ramekins.
Fill a large saucepan with water then add the white wine vinegar, bring up to a rolling boil. use a spoon to stir to create a vortex then gently slide in the egg from the ramekin.
Turn the heat to the lowest setting then leave to cook for 3-4 minutes for a runny yolk, remove from the water and drain any excess water onto some kitchen paper.
