Instructions
Step 1
Lightly season meat with salt and pepper, and brown in a pan with the olive oil.
Step 2
Remove meat from the pan and sweat onions with garlic until soft. Then add flour to form a pale roux. Bring to the boil, and skim any fat.
Step 3
Return meat to pan with the vegetables and thyme. Add enough stock to cover ingredients. Cover with a lid and braise steadily in a moderately hot oven until meat is cooked.
Step 4
Serve with garlic and mash potatoes, and steamed broccoli.
