1 cupgranulated sugar
½ cupbrown sugar
lightly packed
1egg
15 ozpumpkin canned
⅓ cupbutter
melted
1 teaspoonvanilla extract
2 ½ cupsgluten free flour
½ teaspoonxanthan gum
if not already in flour
1 tablespoonpumpkin pie spice
2 teaspoonsbaking powder
1 teaspoonbaking soda
½ teaspoonsalt
1 ½ cupschocolate chips
Homemade Pumpkin pie spice
Instructions
Step 1
Preheat oven to 350°F
Step 2
Spray 2 baking sheets with cooking spray, or line with parchment paper
Step 3
In a large bowl, mix together granulated sugar, brown sugar, egg, and pumpkin until light and incorporated.
Step 4
While mixing, drizzle in butter in a steady stream
Step 5
Add vanilla and mix until incorporated
Step 6
In medium bowl, mix together the flour, xanthan gum (if needed), pumpkin pie spice, baking powder, baking soda, and salt
Step 7
Add dry ingredients into the large bowl of wet ingredients and stir to fully combine
Step 8
Stir in the chocolate chips
Step 9
Scoop 1-1/2 tablespoon-sized rounds on to cookie sheets.
Step 10
Bake for 18 minutes, until set. Do not under-bake.
Step 11
Original instructions say to bake for 14-16 minutes but I found that wasn't long enough.
