Instructions
Step 1
The day before grilling thaw out chicken and place in a gallon zip lock baggie. Coat well with olive oil and mckormick seasoning. Place in the fridge over night.
Step 2
About an hour before grilling squeeze the lime juice onto the chicken and let it marinade the rest of the time Preheat the grill to about 300*F.
Step 3
Place the chicken around the fire indirectly and season with salt and pepper. Spread a small handful of mesquite wood chips over the fire. Cook the chicken for about 7 minutes with the lid closed. Flip the chicken, squeeze some lemon on it, drop another handful of the mesquite wood chips on the fire and grill for another 7 minutes with the lid closed. Rotate and repeat the process.
Step 4
Once you have grilled for about 25-28 minutes or until the internal temp reaches 160 pull them off of the grill and let rest for at least 10 minutes.
