Instructions
Step 1
Preheat oven to 400 degrees.

Step 2
Lay foil on baking sheet with edges turned up and put salmon on foil.
Step 3
Add a thin layer of sweet chili sauce to salmon and cover tightly.
Step 4
Bake for 15 minutes or until done.
Step 5
While the salmon is baking, thickly slice cucumber.
Step 6
In a bowl, layer mixed greens with rice on top. Salmon will go on top of the rice with cucumbers on the side. Pour more sweet chili sauce to taste.
