Instructions

Step 1
1 Preheat the oven to 190°C, gas mark 5. Grease and line the base and sides of a 20cm square cake tin with baking parchment. Put the plums in a saucepan with the caster sugar, 25g butter and 2 tbsp water. Bring to the boil over a medium heat, then simmer for 10 minutes, until the plums are soft and jammy. Set aside for 10 minutes to allow the mixture to cool a little.

2 Meanwhile, put the remaining 200g butter in a large saucepan with the golden syrup and sugar; set over a medium heat. Stir until melted and combined. Add the granola, oats, pecans and a small pinch of salt, then stir together. Spoon ½ the mixture into the base of the tin and smooth out evenly. Spread over the sticky plums, then top with the remaining oat mixture. Bake for 30 minutes. Leave to cool completely in the tin (it will firm up as it cools), then turn out and slice into 12 bars.
