Instructions
Step 1
Feed your starter about an hour before starting, and make sure your 150g of starter are about 50/50 water to flour.
Step 2
Combine flour, water, and starter, working the very wet dough for at least 5 minutes prefer stretching and folding it in half, turning the mixing bowl 90 degrees, and repeating), or until it starts getting ropey.
Step 3
Wait 30 minutes, then work again for 3-5 minutes.
Step 4
Repeat in another 30 minutes.
Step 5
In another 30 minutes, flour the counter, and turn out the dough. Sprinkle with the salt, and stretch and fold another 5 minutes. Use a dough knife if needed with this very wet dough. Shape into a log and place in a buttered 13" Pullman pan.
Step 6
Allow to rise with the lid on for ~5 hours, then remove the lid and cover with plastic wrap for another 2-3 hours, until it's about an inch from the top of the pan, and looks a little bubbly on top.
Step 7
Preheat the oven to 260c and bake with the lid on for 20 minutes, then remove the lid and turn the oven down to 230c and continue baking another 25-30 minutes.
