Step 1
Bake the sweet potatoes whole. Weight and divide the weight by the number of servings.
Step 2
Heat a frying pan over med/high heat. Add the bacon and cook until crispy. Chop into small pieces.
Step 3
Top each serving of sweet potato with 3 Tbsp shredded cheddar cheese, 3 sliced chopped bacon, 1 Tbsp Greek yogurt and chopped chives or green onion.
