Ingredients

1 Tbspextra virgin olive oil
1onion
small, diced
1garlic clove
roughly chopped
500gbeef mince
2 Tbsptomato puree
2celery stalks
finely diced
2carrots
finely diced
150mlbeef stock
5fresh thyme sprigs
2dried bay leaves
1cauliflower
cut into florets
2 Tbspdouble cream
2 Tbspbutter
40gcheddar cheese
grated
50gCheddar cheese
grated for the pie topping
Instructions
Step 1
Preheat the oven to 200°C/180°C fan.

Step 2
Heat the oil in a frying pan, over medium heat. Fry the onions and garlic, until softened.
Step 3
Add the beef mince and break it up with a wooden spoon into small chunks. Cook until browned.
Step 4
When the beef is browned, add the tomato puree, celery, and carrots. Stir and cook for 3mins.
Step 5
Add the stock, thyme, bay leaves, and salt and pepper to the beef mixture. Cook for 15mins, or until the liquid is reduced.
Step 6
Place the cooked beef mix into a 2.2L (roughly) oven-proof baking dish and flatten. Spread and cover with cauliflower mash evenly on top, and sprinkle with remaining 50g of cheese.
Step 7
Bake for 15mins, or until the cheese on top is golden brown.
