Instructions
Step 1
Peel and roughly cut the beetroot
Step 2
Place beetroot on an oven tray and roast at 200 degrees for 45 minutes
Step 3
In the meantime make stock and in a pot melt the butter and add the thyme
Step 4
When the beetroot is ready, move it to the pot and let it fry in butter
Step 5
After 5 minutes, add the stock and let it simmer for 15/20 minutes
Step 6
Once ready, blend the soup, add salt and pepper and some creme fraiche if liked
