Instructions
Step 1
Preheat oven to 325 degrees. Lightly grease 9x13 pan with nonstick cooking spray.
Step 2
In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, salt and brown sugar.
Step 3
In a separate bowl, whisk together the milk, eggs and vanilla.
Step 4
Pour this mixture over the dry ingredients and add the melted coconut oil. Stir to combine.
Step 5
Arrange the diced apples evenly over the bottom of the baking dish and pour the oatmeal mixture over the top. (Cover and refrigerate overnight or bake right away)
Step 6
Bake for 35-45 minutes until the top is golden and the mixture is set.
Step 7
Serve warm or at room temperature.
