Instructions
Step 1
Preheat oven to 350.
Step 2
Lay zucchini on baking sheets, sprinkle with a pinch of salt and bake for 8-10 minutes to soften and remove water. You can also use a pan and cook them like bacon slices to remove a little water.
Step 3
In a medium pan, saute ground beef. Drain fat and add pasta sauce to the pan. Stir to incorporate and allow to simmer while you layer the zucchini.
Step 4
In a baking dish, layer zucchini and then add pasta meat sauce. Add another layer of zucchini and then the ricotta. Top with the final layer of zucchini, top with pesto or pasta sauce and top with basil leaves.
Step 5
Bake in the oven for 10-15 minutes. Serve warm.
