250 gmscurrents

125 gmsmixed peel
125 gmscherries glacé
60 gmspineapple glacé
60 gmsapricots glacé

½ cupbrandy

½ cupbrown sugar

5eggs

¾ cupplain flour

⅓ cupself raising flour

1 teaspoonsalt

2 teaspoonallspice

1 desert spoonParisian essence

250 gmsbutter

½ cupwater

2 teaspoonorange rind

1 teaspoonlemon rind

1 tablespoontreacle

½ teaspoonbi carb soda
Instructions
Step 1
Combine butter, fruit, sugar, brandy and water and stir over heat until butter is melted and sugar dissolved. Bring to boil, reduce heat snd simmer covered for 10 minutes. Cool to room temperature add additional brandy and let stand over night. Stir in rinds, treacle, eggs and then dry ingredients . Bake slowly for 2-3 hours. Cover with foil until cold then wrap in glad wrap.
