½ tspbaking powder
salt
50gbrown sugar
¼ tspnutmeg
1 Tbspflax seeds
to make this dessert vegan, or chia seeds, otherwise, you would need one egg
2 Tbspwater
60mlmilk
any kind of milk will work
3 Tbspvegan butter
1 tspvanilla extract
1flax egg
60gvegan butter
margarine, for caramel sauce
80gbrown sugar
125mlvegan double cream
Instructions
Step 1
If you have chosen the vegan option: in a small bowl mix the flax seeds or chia seeds with the water and let it sit for 5 minutes until it jellifies. (vegan egg)
Step 2
In a bowl mix the flour with the baking powder, salt, brown sugar and nutmeg.
Step 3
In a different bowl mix the egg with the milk, vanilla and the melted butter. Then gradually mix the wet mix with the dry mix.
Step 4
Add the mixture to a muffin tray or in 4 ramekins, and add them to the preheated oven at 180 degrees for 15-20 minutes or until a skewer inserted in the middle comes out clean.
Step 5
Caramel Sauce: While our pudding is baking, we can prepare a caramel sauce. In a saucepan add the butter, brown sugar and the double cream. Leave them on a medium heat stirring occasionally until the butter has melted and the sauce has a brown colour and it is smooth. It will not have a thick consistency. Let the sauce sit at room temperature for 10 minutes before serving.
Step 6
It can be served with almonds or nuts, and a big scoop of icecream.
