Step 1
1. Add spices to flour.

2. Add beef and coat in flour.

3. Melt butter in a saucepan, add beef and cook until browned. Lift out beef and place in an ovenproof casserole.

To microwave: Melt butter in a casserole for 30 seconds.

4. Add onion and celery to remaining fat in pan and cook for 3 minutes.

To microwave: Add onion and celery, cover and cook for 5 minutes.

5. Stir in any remaining flour and orange rind. Cook for a minute.

To microwave: Stir in beef, any remaining flour and orange rind.

6. Gradually stir in orange juice. Bring to the boil, stirring, and cook for a minute. Pour over beef and cover.

To microwave: Gradually stir in orange juice, cover and cook for 10 minutes, stirring twice, or until boiling.

7. Bake at 180°C (350°F) Mark 4 for 1½ hours.
Step 12
To microwave: Cook on MEDIUM-LOW (30%), covered, for about 1 hour, stirring once or twice until the beef is tender.
Step 13
8. Stir in orange segments and walnuts.
Step 14
9. Return to oven and cook for a further 30 minutes.
Step 15
To microwave: Cook, uncovered, for 5-10 minutes.
