Step 1
Preheat oven to 350
Step 2
In a large skillet over medium high heat, heat the olive oil until it shimmers
Step 3
Add the spinach. Cook for 3-4 minutes until wilted
Step 4
Add garlic, lemon zest, salt, pepper. Cook for 30 seconds. Cool slightly & mix in the cheese
Step 5
Spread the spinach & cheese mixture in a even layer over the chicken pieces and roll the breast around the filling. Hold closed with toothpicks or butchers twine. Place the breasts in 9x13 baking dish and bake for 30-40 minutes or until chicken reaches an interval temperature of 165 degrees F. Remove from oven and let rest for five minutes before slicing and serving
