Instructions
Step 1
Preheat oven to 220°C/200°C fan-forced.
Step 2
Heat oil in a large flameproof roasting pan over medium-high heat.
Step 3
Add sausage and gnocchi and cook for 4 minutes or until browned.
Step 4
Add garlic, herbs and onion, then cook, stirring, for 1 minute or until fragrant.
Step 5
Stir in tomatoes and cook for a further 1 minute.
Step 6
Transfer to oven and bake for 8 minutes or until bubbling around edges.
Step 7
Remove pan from oven.
Step 8
Add mozzarella and gently stir to combine.
Step 9
Bake for 10 minutes or until sausage is cooked through and mozzarella has melted.
Step 10
Serve topped with spinach and seasoned with pepper.
