Ingredients

Dressing

2 tablespoonswhite vinegar
1 tablespoonjalapeño pepper juice
poured off from canned jalapeño peppers

1 teaspoonfresh lime juice

¼ teaspoondried oregano

½ teaspoonblack pepper

1 teaspoongarlic
chopped

½ teaspoonscallions
chopped

¼ teaspoonsalt

4 tablespoonsolive oil

Dressing
Step 1
In a small bowl, whisk together all ingredients except olive oil
Step 2
Slowly whisk in the olive oil. Don't worry if the dressing is not perfectly emulsified. Set it aside

Step 3
In a large bowl, gently toss the chicken, greens, tomato and diced avocado
Step 4
Drizzle with dressing to moisten and toss to mix evenly
Step 5
Taste for seasoning and add more dressing, salt or pepper as needed. Garnish with the onion rings
