(Secret Ingredient) Apple Cider Donuts

These apple cider donuts are light and fluffy due to the unexpected secret ingredient: mashed potatoes. It may sound strange but just give them a try!

Instructions

Step 1
Warm cider in microwave to 110 degrees Fahrenheit. Add yeast and set aside 5 minutes.
Step 2
In separate bowl, add potatoes, sugar, oil, vanilla, and egg. Whisk together.
Step 3
In separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
Step 4
Whisk cider/yeast mixture into potato/sugar bowl. Once combined, add flour bowl into cider. (You will likely need to hand mix the dough.)
Step 5
Cover bowl with Saran Wrap and proof 1 hour in a warm place.
Step 6
Roll dough out on floured surface until about 1/2 inch thick and cut with 3 inch biscuit cutter. Cut out middles with smaller cutter.
Step 7
Spread donuts 2 inches apart on a greased cookie sheet. Cover w/ Saran Wrap and proof in a warm area for 30 minutes.
Step 8
Heat fryer (or crisco in a pan) to 350 degree Fahrenheit.

Fry each donut on one side until golden, then flip and fry the other side (should be less than 2 minutes per side depending on your fryer).
Step 10
Move donuts to a plate with a paper towel to absorb some of the oil. Let sit 1 minute and then dip in a mix of cinnamon and sugar to coat. Best enjoyed warm but can be cooled then frozen to preserve freshness for another day.
