Step 1
Heat 2 tablespoons of the oil in a 10 inch skillet, add onion and cook over low heat, stirring occasionally, until completely soft but not colored, about 15 minutes. Add the greens and continue cooking, stirring occasionally, until all moisture has cooked off and chard is tender, about 15 minutes. Season well with salt and pepper. Meanwhile mince garlic with a pinch of salt or mash together in a mortar. Stir together garlic, herbs, and eggs. Combine the greens mixture, eggs, and cheeses. Preheat the broiler. Heat remaining oil in the skillet and add eggs. Give a stir and cook on medium high for a minute, then turn down to low. Cook until eggs are set but still a bit moist on top. Sprinkle with Parmesan and broil until browned. Serve.
