Roasted vegetable couscous with basil and feta

Preheat the oven to 200ºC. Put the vegetables into a large bowl with the garlic, oregano, oil and chickpeas and season with plenty of salt and pepper. Toss everything together then tip onto a large baking tray in a single layer. Roast for 20 minutes until golden brown and softened. Meanwhile put the couscous into a bowl with the stock cube and pour over just enough boiling water to cover. Cover the bowl with clingfilm and leave to steam for 5 minutes. When the vegetables are ready add them to the bowl of couscous, then add the tomato, feta, vinegar and basil and toss to combine.
