Preheat oven to 400°F

Cut fillets down to size and pick out any remaining bones. Lightly salt each side and put on lined baking sheet.

Stir together the garlic, lemon juice, Dijon mustard, and olive oil. Salt and pepper to taste.
Step 4
Slather the fish generously in vinaigrette, and bake in the oven until it reaches an internal temp of 125°F, about 15 minutes
