Instructions
Step 1
Heat half the oil in a large wok or frying pan, then add onion, garlic and chicken. Cook for 5 mins until chicken is white.
Step 2
Then add tomatoes, beans and carrots and cook for another 5 mins.
Step 3
Add capsicum, peas and rice. Then coat in remaining oil.
Step 4
Add turmeric and cook for further 2mins.
Step 5
Stir in vegetable stock and slowly being to the boil stirring frequently.
Step 6
Reduce the heat and add the prawns and simmer gently with consistent stirring for 10-15mins or until liquid has absorbed and rice is soft.
Step 7
Add salt and pepper to taste.
