Instructions
Step 1
In large mixing bowl, combine the 5 cups of bread flour, packet of instant yeast, salt, sugar, and warm water.
Step 2
Mix with a wooden spoon until a shaggy dough ball forms.
Step 3
Flour your work station with some of the flour from the extra 1/4 cup.
Step 4
Turn out your shaggy ball of dough and knead until the ball becomes smooth and elastic, about 10 minutes by hand. You can also knead the dough in a stand mixer, 7-10 minutes.
Step 5
Place kneaded dough ball into a clean bowl and cover with a damp kitchen towel.
Step 6
In a warm place, allow your dough to rise for 60-90 minutes.
Step 7
While the dough is rising, line a baking sheet with parchment paper or a reusable baking mat. Optionally, sprinkle with corn meal.
Step 8
After the dough has doubled in size, release the sides of the dough from the bowl. It will deflate decently.
Step 9
Turn dough out onto workstation and gently form into a loaf shape.
Step 10
Place the loaf onto the lined baking tray.
Step 11
Cover the loaf with the damp kitchen again and allow the dough to rise for a second time, 30-45 minutes.
Step 12
When the rise is complete, uncover the dough and preheat the oven to 425° F.
Step 13
With a very sharp blade, score the top of the loaf 2-4 times on a diagonal slant.
Step 14
Bake for 25 minutes, or until golden brown. You can also check the bread’s readiness by tapping the bottom of the loaf. A hollow sound means cooked bread!
